Since 1998 Peter has specialised in HACCP (Hazard Analysis Critical Control Points) and managing food safety, and also work with ISO quality and environmental management systems.

Consultancy
Peter Clarke is also a food safety and quality management system consultant. He continues to provide consultancy to the training division of the CIEH, and is a moderator for CIEH courses. Peter has been the principal speaker at a succession of CIEH seminars, introducing new training courses to other companies and Environmental Health professionals.
